Banana Maple Muffins


  • 1 cup self-rising flour
  • 1/4 teaspoon baking soda
  • 1/2 cup sugar
  • 2 ounces pecans chopped
  • 1 teaspoon grated orange zest finely
  • 3/4 cup sour cream
  • 1 large egg lightly beaten
  • 1/4 cup unsalted butter melted
  • 1/4 cup maple syrup
  • 2 bananas very ripe, . mashed
  • powdered sugar to dust, optional


  • Preheat the oven to 375°F. Lightly grease a 12-hole muffin pan.

  • Sift the flour and baking soda into a large bowl. Add the sugar, pecans and orange zest and mix to combine. In a separate bowl, mix together the sour cream, egg, butter and maple syrup. Add to the dry ingredients, then add the mashed banana. Mix until just combined, but do not over-mix.

  • Spoon into the prepared pan. Bake for 20 mins, until a skewer inserted in the center of a muffin comes out clean. Leave to stand in the pan for 2 mins before turning out onto a wire rack. Serve warm or cooled, dusted with powdered sugar, if desired.
