Sinigang Na Manok(Chicken in Sour Broth)

Ingredients:

  • 2 1/2-3 lb broiler fryers cut up
  • 2 tablespoons vegetable oil
  • 1 clove garlic minced
  • 2 medium tomatoes sliced
  • 1 medium onions thinly sliced
  • 1 1/2 teaspoons salt
  • 1 tablespoon patis
  • 18 teaspoon black pepper
  • 5 cups water
  • 5-6 pieces tamarind
  • 1 medium radishes icicle, cut in pieces
  • 1/2 pound mustard greens or water cress
  • 3 each scallions, spring or green onions

Directions:

  • Saute garlic, onion and tomatoes in hot oil in big saucepan.

  • Add chicken and cook stirring for 10 minutes or until chicken colors slightly.

  • Add salt, pepper, patis, tamarind powder and 5 cups water.

  • Cover simmer for 30 minutes or until chicken is tender.

  • Add radish and cook for 5 minutes.

  • Add mustasa, cover and remove heat.

  • Correct seasoning.

  • Serve hot.
